I realized I expected more from my garlic powder than the granulated generic stuff available at supermarkets in 2011. As the granddaughter of garlic farmers, I expected garlic powder to be at least as flavorful as my grandparents’ hardneck garlic – that intense, borderline spicy pungency that store-bought garlic powders lack entirely. I looked everywhere, and it became clear that real garlic powder was nearly impossible to come by.

At the time, I was working 60-hour weeks and had little free time to spend in the kitchen. But I aimed to eat healthfully and economically, so cooking at home was essential. The other thing that was essential? Garlic flavor! Short on time, I longed for a quality garlic powder that would save me the trouble of peeling/dicing/sautéing and still taste just like my grandparents’ garlic. So I fired up my dehydrator and I filled it with GARLIC!

It took days… but after I ground it up, what emerged was the most intensely flavorful garlic powder I’d ever had in my life. I was hooked!

The story behind the name ROCKERBOX:

These homemade dusts were time and labor intensive. I gifted and traded them away as if they were precious gold nuggets, hence the name: a “rockerbox” was the sifting tool used during the gold rush to separate gold from soil. I knew that finding real garlic and onion powders in a world of processed foods was a precious thing, and the idea was born.
